Bollinger Rosé NV has doubled in volume since its much-celebrated introduction in 2008, though it still represents just 200,000 bottles, merely one-tenth of Special Cuvée. The blend is now slightly different to Special Cuvée, here 62% pinot noir, 24% chardonnay and 14% meunier. Pinot noir red wine from the grand cru villages of Verzenay (predominantly) and Aÿ is given long pre-ferment maceration and matured in barrel for 12 months. The house prides itself on its red wine, and such is its strength, concentration, depth of colour and robust tannin structure that a tiny 5– 6% is all that is required. Like Special Cuvée, it is matured 3– 4 years on lees. The blend is more than 85% grand crus and premier crus, with a light dosage of 8g/ L. This is breathtaking rosé, full-bodied in every way, with magnificent body, spellbinding purity and impeccable poise. Greater elegance is the mandate, and it meets the brief with effortless grace, a medium salmon hue and vibrant liveliness in the midst of profound depth. Characterful intensity of coffee bean and dark chocolate celebrates its toasty, secondary side, seamlessly matched to a tangy core of pink grapefruit, wild strawberry and fig. It’s all intricately laced together with fine-tuned acidity, a creamy bead and subtle tannin texture that reinforces soft chalk mineral texture, lingering long on a refined finish.
