The 2015 Cabernet Sauvignon was produced in a similar way as the rest of the varietal reds—it fermented in concrete vats and aged partly in used French oak barrels. The Cabernet ripened nicely, and there are spicy and balsamic aromas but nothing green, but more importantly, there are no signs of excess ripeness. It feels harmonious and balanced, with elegance. The palate is sleek and polished, with the signature fine-grained tannins from the variety. 13,000 bottles produced. It was bottled in January 2017.
