A wine of extraordinary charm and complexity, now in the full glory of maturity. The bouquet is exquisitely scented, recalling roasted meats, smoked charcuterie, and a wide range of herbs including thyme, oregano and sage. The palate is rich and smooth as satin, with tremendous persistence and breathtaking harmony. An utterly gorgeous wine. (Difficult to reconcile with the bottle tasted a decade ago)

Deep garnet-brick in color, the 1995 Hill of Grace has a slightly leathered, dried fruit nose that is a little tired though highlighted by notes of sandalwood, tree bark and earth, hints of leather and meat. There''s a touch of barnyard on the palate and it is a bit past its peak, fading slightly with crisp acid and firm, chewy tannins through a long finish.

Medium purple-red; the bouquet is clean, moderately intense, with faint touches of green behind the sweet berry fruit, arguably adding complexity. The palate has unexpected richness and structure, with powerful yet ripe tannins; still very closed, and may develop exceptionally well with time. The culmination of two drought winters, record spring frosts, poor fruit set and a hot, dry summer, then the coldest March on record seemed a recipe for disaster. Once again a warm April came to the rescue with very ripe grapes being harvested. Yields down by 30 per cent to 40 per cent; peppercorn-sized grapes on the bunches.

"The opaque ruby/purple-colored 1995 Shiraz Hill of Grace (along with Penfolds' Grange, one of the most famous Shiraz of Australia) boasts abundant quantities of toasty American oak, fat, blackberry, tar-infused fruit flavors, a deep, unctuous texture, and a powerful, concentrated, long finish. This renowned Shiraz is indeed all it should be for its lofty price tag. It should drink well for 15-20 years."
