The 1999 Cabernet Sauvignon Bin 707's dense ruby/purple color is followed by a tight but promising nose of black currants, leather, and licorice. In the mouth, there are abundant quantities of black currant fruit as well as hints of creosote, earth, truffles, and subtle oak. The acidity is high, much of it probably added, which is unfortunate as the raw materials look impressive. The high acidity compresses the palate and pinches the finish. Nevertheless, this is a very good Cabernet that should drink well for 10-12 years.

Medium to full red-purple; ripe blackberry/earthy varietal character on the bouquet, then a palate with great depth and power, supported by controlled, savoury tannins and lingering blackberry fruit. The oak handling throughout cannot be faulted. Drink to 2015.

Black olive and sump-oil. Very rich, gutsy, tannic and superripe. Chewy mouth-coating tannins. Oooff! Very tannic and grippy. Now to 15+ years.
