The 2007 Cabernet Sauvignon is blended of 88% Cabernet Sauvignon, 4% Petit Verdot, 4% Malbec and 4% Cabernet Franc, seeing 50% new oak. Deep garnet-purple colored, it gives crushed black currant and blackberry aromas with some menthol, cigar boxes, black olive and dried Mediterranean herbs. A medium to firm level of fine grained tannins and medium-high acidity support the concentrated, savory / smoked meat flavors that mingle well with dark berries and spice. The finish is long. Hold it for a year or two more before beginning to drink and it should cellar to 2020+. 1600 cases were produced.
