Matured in 100% new American oak, the 2008 Bin 707 Cabernet Sauvignon gives pronounced notes of creme de cassis, cedar and blackberry preserves over a fragrant undercurrent of crushed mint, eucalypt, violets and forest floor. Very concentrated, rich and structured in the mouth, it has a firm level of chewy tannins, crisp acid and a long oaky finish with some spiciness coming through. It really needs time for the oak to integrate and should drink best 2014 to 2024+.

Deep, dark red, the wine has an extremely complex and varietally expressive bouquet, its fragrant scents having a pinot noir-like allure, drawing you back repeatedly. The blackcurrant and cassis palate is a seamless extension of the bouquet, with extreme length and such impeccable balance it hovers on the edge of outright elegance. Drink to 2040.

Ignore the name, Bin 707 is the right hand man to Grange, hovering well above any other Bin wine on the Penfolds ladder – and a line of monumental releases confirms it. Penfolds has worked magic with 2008 cabernet on all fronts (read on) and in the grand scheme of international cabernet, 707 is the bargain of this release. Coonawarra, Barossa and Wrattonbully all play their part in building formidable power yet consummate control. Bang-on cabernet hallmarks of vibrant blackcurrants, tobacco, coffee and a lingering violet perfume smash into the most prominent oak of any Penfolds wine this year (100 percent new American). Surging, looming, exact. Drink 2028 - 2043.
